Ingredients
- 2 cups (450 g) plain nonfat Greek yogurt
- 2 scoops (60 g) chocolate whey protein powder
- 2 tablespoons (10 g) unsweetened cocoa powder
- 2 tablespoons (30 ml) maple syrup
- 1 teaspoon vanilla extract
- 1 cup (125 g) fresh raspberries, divided
- 2 tablespoons (20 g) dark chocolate, finely chopped
Before you start
- Use thick strained Greek yogurt, not regular yogurt; regular yogurt makes a loose dessert. A different protein powder can change sweetness and thickness, so add it gradually and check its label before relying on the nutrition estimate.
Instructions
- In a medium bowl, whisk the Greek yogurt, chocolate protein powder, cocoa, maple syrup, and vanilla until no dry powder remains. If the mixture is too stiff to whisk, let it stand for 2 minutes, then fold with a spatula until smooth.
- Fold in 3/4 cup of the raspberries, pressing a few against the bowl to create streaks. Do not overmix or the dessert will become loose.
- Divide the mixture among four small cups, about 3/4 cup each. Top with the remaining raspberries and chopped dark chocolate.
- Cover and chill for at least 30 minutes, until spoonable and cold. Serve each cup as one dessert portion.
Meal prep, storage, and reheating
Cover and refrigerate for up to 2 days. Do not freeze; thawing separates the yogurt. For the best texture, add the chocolate topping shortly before serving.
