Keto Berry Avocado Smoothie

This keto berry avocado smoothie is a thick, single-serve blend of avocado, unsweetened almond milk, and a deliberately small raspberry portion. It has a creamy texture without banana; optional unflavored protein powder can make it a more substantial drink without changing the berry amount.

Fasting fit

This is a snack or part-of-meal smoothie rather than a complete meal by itself. The optional protein powder makes it a more substantial choice, but does not change the measured raspberry portion or replace a meal's other components.

Ingredients

  • 1/2 medium avocado (about 75 g flesh)
  • 1/4 cup (30 g) frozen raspberries
  • 1 cup (240 ml) unsweetened almond milk
  • 2 tablespoons chia seeds
  • 1 tablespoon almond butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup ice
  • 1 to 2 teaspoons granulated keto-friendly sweetener, optional
  • 1 scoop (about 25 g) unflavored, low-carbohydrate protein powder, optional

Before you start

  • Keep the raspberries at 1/4 cup. Adding a larger handful changes both the flavor and the carbohydrate calculation; use ice, not more fruit, for a colder or larger drink.
  • Protein powder is optional. Choose an unflavored product with nutrition information that fits your own ingredient preferences; it makes the smoothie thicker and changes its nutrition. Almond milk and almond butter contain tree nuts, and chia is a seed.

Instructions

  1. Add the almond milk, avocado, raspberries, chia seeds, almond butter, lemon juice, vanilla, ice, and optional sweetener to a high-speed blender.
  2. Blend on high until completely smooth, stopping once to scrape down the sides if a piece of avocado remains.
  3. If using protein powder, add it after the first blend and blend for 10 seconds more. Add 1 to 2 tablespoons water only if the smoothie is too thick to blend.
  4. Pour into a glass and drink immediately; the chia seeds will continue to thicken the mixture as it stands.
