Ingredients

Burger bowls

  • 1 lb (450 g) 90% lean ground beef
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt and 1/4 tsp black pepper
  • 6 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced dill pickles
  • 1/2 small red onion, thinly sliced
  • 1 avocado, sliced

Pickle sauce

  • 1/3 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp finely chopped dill pickles
  • 1 tsp pickle brine

Before you start

  • Use dill pickles and check the label on mayonnaise and mustard if added sugar matters to your ingredient choice. Greek yogurt makes a tangier, less rich sauce; use it only if dairy works for you.
  • Ground turkey or chicken may replace the beef. Add 1 extra tsp olive oil while cooking because those meats are leaner.

Instructions

  1. Stir the mayonnaise, mustard, chopped pickles, and pickle brine in a small bowl. Refrigerate while you prepare the bowls.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the beef, garlic powder, paprika, salt, and pepper. Break up the meat and cook for 7 to 9 minutes, until no pink remains and the browned bits smell toasty. Drain excess fat if needed.
  3. Divide lettuce, tomatoes, cucumber, pickles, onion, and avocado among four bowls.
  4. Spoon the hot beef over the vegetables and finish each bowl with pickle sauce. Serve immediately so the lettuce stays crisp.
