Ingredients

  • 1 cup natural creamy peanut butter
  • 1/2 cup vanilla whey protein powder
  • 3/4 cup old-fashioned rolled oats
  • 2 tbsp chia seeds
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • Pinch of salt

Before you start

  • The 7 g estimated protein per bite is calculated using a whey powder labeled 24 g protein per 30 g scoop; use the nutrition label on your own powder to recalculate if it differs. Plant protein can make the mixture drier, so add water 1 tsp at a time only as needed.
  • Peanut butter contains peanuts, and whey contains milk. Sunflower-seed butter is a peanut-free option but changes flavor and may need less added water.

Instructions

  1. Stir peanut butter, protein powder, oats, chia, cocoa, applesauce, vanilla, and salt in a bowl until no dry powder remains.
  2. Cover and refrigerate 30 minutes so the oats and chia hydrate. If the chilled mixture crumbles when squeezed, stir in water 1 tsp at a time; if it is sticky, add oats 1 tbsp at a time.
  3. Roll into 16 walnut-size bites, about 1 tbsp each. Refrigerate before serving.

Meal prep, storage, and reheating

Keep the bites refrigerated in a sealed container for up to 1 week. For longer storage, freeze in a single layer, then transfer to a freezer container for up to 2 months. Thaw one bite in the refrigerator or for 10 minutes at room temperature. Do not leave them out for extended storage.
