Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 3 very ripe medium bananas (about 330 g peeled), mashed
  • 1/3 cup (80 ml) neutral oil
  • 1/2 cup (100 g) light brown sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine salt
  • 1/2 cup (60 g) chopped walnuts, optional

Before you start

  • The bananas should be heavily speckled or mostly brown; firm yellow bananas provide less moisture and sweetness. The flaxseed and water replace the egg in this formula—do not omit the five-minute thickening step.
  • Oil replaces butter without changing the amount. Walnuts contain tree nuts; omit them for a nut-free loaf rather than substituting an equal amount of flour.

Instructions

  1. Heat the oven to 350°F (175°C). Line an 8 1/2-by-4 1/2-inch loaf pan with parchment.
  2. Stir flaxseed and water together; stand for 5 minutes. Whisk in banana, oil, sugar, and vanilla.
  3. Whisk flour, baking soda, cinnamon, and salt in a second bowl. Fold into the banana mixture just until no dry flour remains, then fold in walnuts if using.
  4. Scrape into the pan and bake until a skewer in the center comes out without wet batter, 50 to 55 minutes. Cool in the pan 20 minutes before lifting out and slicing.

Store the cooled loaf airtight at room temperature for 2 days or refrigerate for up to 5 days. Freeze individual wrapped slices for up to 2 months. Thaw at room temperature or warm briefly in a toaster oven.
