Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 1/2 cups (300 g) dried green split peas, rinsed and picked over
- 6 cups (1.4 L) low-sodium vegetable broth
- 1 medium Yukon Gold potato, diced
- 1 bay leaf
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Before you start
- Use vegetable broth for a vegan soup; its sodium varies widely, so choose low-sodium broth and adjust salt at the end.
- Split peas do not need soaking. Rinse them and discard damaged peas or debris before cooking.
Instructions
- Heat oil in a large pot over medium heat. Cook onion, carrots, and celery until softened, 7 minutes. Add garlic and smoked paprika for 30 seconds.
- Add split peas, broth, potato, bay leaf, salt, and pepper. Bring to a boil, then reduce to a gentle simmer.
- Cook partly covered, stirring occasionally, until peas are very tender and the soup is thick, 60 to 65 minutes. Add 1/2 cup water if it becomes too thick before the peas soften.
- Remove bay leaf, stir in lemon juice, and season to taste. For a smoother texture, blend part of the soup with an immersion blender.

Cool quickly, then refrigerate airtight for up to 4 days or freeze for up to 3 months. Reheat gently with a splash of water or broth, stirring until hot; the peas continue to thicken in storage.
